Ingredients for Dapanji: Chicken leg meat, green peppers, potatoes, onions, flour, salt, light soy sauce, dark soy sauce, beer, Sichuan peppercorns, dried red chili peppers, star anise, cinnamon, broad bean paste.
Step 1: Prepare and cut the ingredients.
Step 2: Gather the required seasonings.
Step 3: Clean the chicken legs and cut them into pieces, set aside.
Step 4: Boil water in a pot, add a few slices of ginger, and blanch the chicken pieces for 1 minute to remove impurities and fishy smell.
Step 5: Remove the chicken pieces and set aside.
Step 6: Heat a pan with cold oil, fry Sichuan peppercorns over low heat until fragrant, then remove.
Step 7: Add rock sugar and stir continuously until it melts.
Step 8: Pour in the chicken pieces, ginger slices, and garlic cloves, stir-fry to evenly coat the chicken pieces with color.
Step 9: Pour in an appropriate amount of light and dark soy sauce.
Step 10: Add dried red chili peppers, star anise, cinnamon, and broad bean paste.
Step 11: Pour in beer, which really enhances the flavor!
Step 12: Add water to cover the chicken pieces, add potatoes, cover the pot, and simmer on low heat for about 20 minutes.
Step 13: Increase the heat, add peppers and onions, and stir-fry.
Step 14: Stir-fry for 2-3 minutes. I left more sauce for mixing with noodles.
Step 15: Now, for the noodle making process, mix a bowl of salted water and slowly pour it into a basin, stirring.
Step 16: Knead into a dough and let it rest for 30 minutes.
Step 17: After resting, roll the dough into a pancake, not too thin.
Step 18: Brush a plate with oil, cut the rolled dough into strips, place them on the plate, brush another layer of oil, cover with plastic wrap, and let rest for another 30 minutes.
Step 19: The rested dough is very easy to pull into noodles.
Step 20: Directly cook the pulled noodles in boiling water.
Step 21: Drain the cooked noodles and set aside, I rinsed them in cold water to prevent sticking.
Step 22: The fragrant Dapanji is ready! The taste is just like the ones sold outside!
