Savory Qingtuan Recipe

Ingredients for Savory Qingtuan: Wheat starch 120g, Boiling water 200g, Glutinous rice flour 400g, White sugar 55g, Green juice 350g, Vegetable oil 20g.
Method: Step 1: Scald wheat starch with boiling water, add the oil from the recipe, and knead evenly. Step 2: Combine glutinous rice flour, white sugar, green juice, and the scalded starch dough to form a dough. Step 3: Prepare the filling. Here, we have stir-fried pork mince mixed with bamboo shoots, mushrooms, and shepherd’s purse. Season to taste and stir-fry without adding water. Step 4: Wrap the Qingtuan. Step 5: Steam in a steamer for 15 minutes. Once cooled, the Qingtuan will be chewy and not dry. They can be wrapped in plastic wrap for storage and reheated for consumption.


Cooking Tips for Savory Qingtuan: The scalded starch dough is essential, otherwise, the Qingtuan will not stand upright after steaming. It is recommended to pre-cook the meat filling before wrapping to reduce steaming time and improve the texture of the dough. You can also use red bean paste or meat floss fillings.
