Ingredients for Spicy Eggs: Eggs 4, Pointed Peppers (Cayenne Peppers are better) 3, Small Red Peppers a few, Garlic Sprouts 3, Starch as needed, Salt as needed, Light Soy Sauce as needed, Fermented Black Beans as needed, Garlic as needed.
Method for Spicy Eggs: Step 1: For my family of four, I boiled six eggs. Place them in cold water, bring to a boil and cook for ten minutes, then remove and rinse under cold water to peel the shells.
Step 2: Wet the knife tip and cut the eggs into thick slices, then coat with starch.
Step 3: Cut small red peppers and green peppers into rings, chop garlic sprouts into small pieces, and mince the garlic.
Step 4: Heat a pan with oil and fry the eggs until both sides are golden brown, then remove and set aside.
Step 5: In the remaining oil, fry the fermented black beans and minced garlic until fragrant, then add the peppers and garlic sprouts to stir-fry.
Step 6: Return the eggs to the pan, add salt, light soy sauce, and a little sugar, then stir-fry until well combined and serve.
