Ingredients for Stir-Frying Dried Tofu: 4 pieces of Youxian Dried Tofu, 100 grams of pork belly, 1 stalk of celery, 2 various green peppers.
Method for Stir-Frying Dried Tofu:
Step 1: Slice Youxian Dried Tofu into thin pieces, cut green peppers into irregular chunks, chop celery into sections, and slice pork belly. Slice garlic as well. (Restaurants usually use 2 pieces, but treat yourself better by doubling the amount.)
Step 2: Pan-fry the pork belly to release the fat, until both sides are slightly charred.
Step 3: Add garlic slices, dried red chili peppers, and green peppers to stir-fry until fragrant.
Step 4: Incorporate the dried tofu, two tablespoons of light soy sauce, one tablespoon of oyster sauce, half a tablespoon of cooking wine, half a teaspoon of sugar, half a teaspoon of chicken essence, and an appropriate amount of salt to adjust the saltiness. Stir everything evenly.
Step 5: Dried tofu cooks quickly, so do not stir-fry for too long. Once it is flavored, add celery sections and stir-fry for another minute.
Step 6: Serve the dish in a plate.
