Ingredients for Stir-Fried Bamboo Shoots: 50g bamboo shoots, 2 red peppers, oil, salt, chicken essence in appropriate amounts, 2 garlic leaves, 2 celery stalks.
Method: Step 1: First, cut the dried bamboo shoots into thin strips. Note that they are not soaked in water at this stage!
Step 2: Soak or boil the bamboo shoots until they are soft, then drain the water and set aside.
Step 3: Prepare the red peppers, celery, and garlic leaves by cutting them and setting them aside.
Step 4: Heat the pan without oil first, then add the bamboo shoots to remove excess moisture. Add oil and stir-fry the bamboo shoots for one minute. Add red peppers, garlic leaves, and celery, and stir-fry for two more minutes. Finally, season with salt and chicken essence.
