Ingredients for Braised Pork with Preserved Vegetables: 300g pork belly, 150g preserved vegetables, 3 cloves of garlic, 2 small chili peppers, 2 green onions, 5g white sugar, 10g peanut oil, 10g light soy sauce, 1g chicken essence.
Method:
1. Clean the pork belly, dry it, and cut it into small pieces that are 1cm thick and 2cm wide. The preserved vegetables are already marinated and salty; sprinkle 5g of sugar over them. Slice the garlic, cut the green onions into small sections, and the chili peppers into small pieces.
2. Heat the pan over medium heat, add peanut oil, and place the meat pieces in (add the lean meat a bit later), stir-frying over low heat.
3. Stir-fry for about 3 minutes until the meat pieces are fragrant on both sides, then drizzle in light soy sauce, add the preserved vegetables, and stir-fry for a short while. Add an appropriate amount of boiling water (about half the volume of the vegetables), and simmer over low heat for 10 minutes.
4. After adding the garlic cloves, green onions, and chili peppers, stir-fry for one minute, then add chicken essence, and the dish is ready to serve!
