Method: Step 1: Peel 3-4 preserved eggs and set aside. Step 2: Wash the green peppers, cut them in half, or into small pieces. Step 3: Add a little oil to a non-stick pan and fry the peppers until cooked, then remove and peel off the thin skin. Step 4: Finely chop the chili peppers, green onions, and garlic, then mix with soy sauce, oyster sauce, chicken essence, sesame oil, and a pinch of salt. Step 5: Since I don’t have a mortar and pestle, I put the seasonings, preserved eggs, and chopped green peppers in a pot, and mashed them with a spatula.
