Ingredients for Yam Pork Rib Soup: 500g pork ribs, 1 corn cob, 1 carrot, 1 iron stick yam, 5g red dates and goji berries, 5g ginger, garlic, and green onions.
Method:
Step 1: 500g fresh pork ribs, 1 carrot, peeled and cut into irregular pieces; 1 corn cob, cut into sections; 1 iron stick yam, peeled and cut into irregular pieces; appropriate amount of ginger, garlic, and green onions; a little red dates and goji berries.
Step 2: Bring water to a boil in a pot, blanch the pork ribs for 5 minutes, add ginger, garlic, and green onions, and cooking wine to remove the smell.
Step 3: Pour oil into the pot and fry ginger, garlic, and green onions until fragrant.
Step 4: Pour in the pork ribs and pan-fry until slightly browned on both sides.
Step 5: Pour in boiling water, add red dates, a spoonful of cooking wine, a pinch of pepper, and boil over high heat for 10 minutes; then switch to medium-low heat and simmer for 40 minutes, or transfer to a pressure cooker and stew for 20 minutes. (The secret to a creamy and rich soup color lies in using boiling water and boiling over high heat for 10 minutes).
Step 6: Spread corn and carrots at the bottom of a casserole pot.
Step 7: Pour in the cooked pork ribs and soup.
Step 8: Add yam, and stew for another 15 minutes, season with a teaspoon of salt. (Since yam is quite starchy and can easily break when pressed at the bottom, it should be placed on top).
Step 9: Sprinkle with goji berries and chopped green onions.
Step 10: Serve, it’s so fragrant!
